An easy spicy potato wedges recipe using Pip & Wilbur's Habanero Flavoured Olive Oil and Jalapeno Flavoured White Balsamic Vinegar.

Pip & Wilbur's Easy-Peasy Spicy Potato Wedges

These easy-peasy potato wedges are a family favourite.  Easy to prepare, delicious and a healthier alternative to traditional french fries.  Pairs well with dry wines.

If you've got young ones though, you might want to substitute the habanero flavoured olive oil with something savoury - like Pip & Wilbur's basil flavoured olive oil or roasted garlic flavoured olive oil!

Shopping List:

  • About 2 lbs. roasting potatoes
  • 1 large sweet onion
  • 3-4 tablespoons Pip & Wilbur Habanero Flavoured Olive Oil
  • 2 tablespoons whole-grain mustard or honey mustard in-a-pinch
  • Ground sea salt or Himalayan rock salt to taste
  • Ground black pepper to taste
  • Fresh parsley to taste


1  Preheat the oven to 425°F,

2  Cut your potatoes into wedge slices.  Keep the wedges on the thinner side so that they cook a bit more evenly and reduce cooking time.

3  Cut your onion into 1/4" slices.

4  Add the potatoes, onion, Pip & Wilbur Habanero Olive Oil, salt, pepper and mustard altogether in a bowl and mix well.

5  Place the potato mixture on a non-stick pan and roast for about 50 minutes. 

6  Check on them regularly and be sure to rotate them as well.  They're done when they're light brown in colour.

7  Add some more salt and parsley to taste.

Remember: all ovens are different - keep an eye on your wedges and make sure they're finished before serving.

For those of you that really enjoy heat, drizzle Pip & Wilbur Jalapeno or Jalapeno-Lime White Balsamic Vinegar alongside your wedges.
